I used light spelt flour and now I am hooked on making French pastries! I love working with choux pastry since I have mastered using spelt flour. The recipe is below followed by a picture of my dear daughter enjoying her mom&#8217;s creation.<\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00a0<strong><span style=\"font-size: large;\"><em> Spelt Choux Pastry<\/em><\/span><\/strong><\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">1\/2 cup water<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">1\/4 cup salted butter<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">1\/2 cup light spelt flour<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 eggs<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Heat oven to 400 o F<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Bring butter and water to boil&#8211;stirring.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Add flour all at once.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Stir vigorously until batter sticks together in a ball.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Remove from heat and cool slightly.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Add eggs, one at a time, stirring vigorously after each addition until batter is velvety.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Butter baking sheet and cover with parchment paper.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Using a 1\/2 inch pastry nozzle, pipe into 5 inch long strips (5 eclairs total).<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Bake for 15 min.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Turn oven down to 375 o F and bake for 5-8 more minutes until pastry is slightly golden.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Cool. Slice length wise.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Fill with fresh whipped cream.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Top with chocolate sauce.<\/span><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: arial, sans-serif; font-size: large;\"><strong><em>Sauce au Chocolat\u00a0Fran\u00e7ais<\/em><\/strong><\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">3\/4 cup bitter sweet \u00a0French chocolate<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 tbsp butter<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">1\/4 cup water<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Heat on low in sauce pan stirring constantly. Spoon onto cooled eclairs.
