My guests raved about it! <strong>The dish is super healthy<\/strong> as kale is very nutrient rich and the canned peaches\u00a0actually contain\u00a03.5 times higher vitamin C levels and 1.5 times the antioxidants of fresh peaches. I like to add canned peaches \u00a0to dishes all year long as they&#8217;re an affordable option and always taste delicious! I&#8217;ll add them to desserts, entrees or salads. <a title=\"Greek  Barley and Peach Salad\" href=\"http:\/\/mixhart.ca\/blog\/?p=2265\">Try more peach recipes here.<\/a><\/p>\n<figure id=\"attachment_2431\" class=\"thumbnail wp-caption aligncenter\" style=\"width: 504px\"><a href=\"http:\/\/mixhart.ca\/blog\/?attachment_id=2431\" rel=\"attachment wp-att-2431\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-2431\" alt=\"IMG_6555\" src=\"http:\/\/mixhart.ca\/blog\/wp-content\/uploads\/2013\/04\/IMG_6555-1024x850.jpg\" width=\"504\" height=\"418\" srcset=\"https:\/\/blog.mixhart.ca\/wp-content\/uploads\/2013\/04\/IMG_6555-1024x850.jpg 1024w, https:\/\/blog.mixhart.ca\/wp-content\/uploads\/2013\/04\/IMG_6555-300x249.jpg 300w, https:\/\/blog.mixhart.ca\/wp-content\/uploads\/2013\/04\/IMG_6555-520x432.jpg 520w, https:\/\/blog.mixhart.ca\/wp-content\/uploads\/2013\/04\/IMG_6555-260x216.jpg 260w\" sizes=\"auto, (max-width: 504px) 100vw, 504px\" \/><\/a><figcaption class=\"caption wp-caption-text\">Healthy Peaches and Greens<\/figcaption><\/figure>\n<p>The recipe is from The California Cling Peaches Board.\u00a0If you enjoy healthy dishes that taste deliciously flavorful, give the recipe a try:<\/p>\n<h2 style=\"text-align: center;\"><strong>Healthy Peaches and Greens<\/strong><\/h2>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">1 bunch of kale<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">2 tbsp olive oil<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">2 garlic cloves, thinly sliced<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">Pinch of hot chili flakes<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">1\/2 cup sodium reduced chicken broth (or veggie broth)<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">1 can California Cling peaches in fruit juice or light syrup, well drained<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">1 tsp red wine vinegar (I used balsamic which was delicious)<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">2 tbsp patted dry slivered sundried tomatoes<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">Pinch of salt<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\">1\/4 cup crumbled feta cheese<\/span><\/p>\n<p><span style=\"color: #000000;\">Cut off and discard tough stems. Stack kale leaves and thickly slice (about 8 cups packed). Heat oil in large frying pan over medium heat. Add garlic and chili flakes. Stir about 30 seconds. Add half the greens by large handfuls, stirring just until they turn bright green, 1 to 2 minutes. Add broth then remaining greens. Stir. Cover, reduce heat to low and stirring occasionally, cook until greens are tender, about 5 minutes. If they stick add a couple of tablespoons more broth or water. Add drained peaches, vinegar, sundried tomatoes and salt. Stir uncovered until hot.
