This way of eating is not a whim, I am following it in an effort to conquer some chronic health issues. I will say that my diet makes me feel physically better than ever. I am strong and full of energy. I don&#8217;t eat dairy, modern wheat or processed foods.<\/p>\n<p style=\"text-align: left;\">The most difficult thing for me is saying goodbye to cheese. A bean burrito is naked without it! Second to cheese, the hardest thing is saying goodbye to is H\u00e4agen Dazs.\t\t\t<i class=\"icon-sad \" style=\"font-size:14px; display:inline-block; color:#FF00FF; \t\t\t\"><\/i>\n\t\t\t\t\n<p style=\"text-align: left;\">To make up for not being able to have the occasional sweet treat, I&#8217;ve invented my own brand of treats. I bake a pan of fruit \/oatmeal squares every few weeks, freeze them and have a square any time I feel like a sweet treat. The beauty of my recipe is that I use no processed sugar. All the sweetness comes from dates. I&#8217;ve made date squares and cherry squares but blueberry are my favourite. The blueberry flavour is strong and delicious. I hope you enjoy these healthy and tasty treats:<\/p>\n<h4 style=\"text-align: center;\"><strong>Blueberry Squares by Mix<\/strong><\/h4>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\">Topping and crust:<\/span><\/p>\n<p style=\"text-align: center;\">1 1\/2 cup of large flake oats<\/p>\n<p style=\"text-align: center;\">1 1\/2 cup almond flour (ground almonds)<\/p>\n<p style=\"text-align: center;\">1 tbsp ww sprouted spelt flour<\/p>\n<p style=\"text-align: center;\">1\/2 c date sugar<\/p>\n<p style=\"text-align: center;\">3\/4 c coconut oil (<em>or 1\/4 c butter + 1\/2 c coconut oil\u2014butter keeps them firmer at room temp.<\/em>)<\/p>\n<p style=\"text-align: center;\">1 tsp cinnamon<\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\">Filling:<\/span><\/p>\n<p style=\"text-align: center;\">1\/3 lb pitted dates (150 g approx.)<\/p>\n<p style=\"text-align: center;\">3 cups of blueberries (I use frozen)<\/p>\n<p style=\"text-align: center;\">juice from 1\/2 lemon<\/p>\n<p style=\"text-align: center;\"><em>*if using fresh blueberries, add 1\/3 cup water to the berries<\/em><\/p>\n<p style=\"text-align: center;\">-on medium heat, boil blueberries and dates and lemon juice until thickened,<\/p>\n<p style=\"text-align: center;\">breaking up dates until the mixture is smooth and blended<\/p>\n<p style=\"text-align: center;\">-mix dry ingredients together and pat 1\/2 into greased 9&#8243;x9&#8243; pan<\/p>\n<p style=\"text-align: center;\">-spread blueberry filling on top<\/p>\n<p style=\"text-align: center;\">-top with remaining oatmeal topping<\/p>\n<p style=\"text-align: center;\">-bake at 350 F for 25 minutes<\/p>\n<p style=\"text-align: center;\">-slice when cooled and store in fridge or freezer<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These blueberry oatmeal squares are delicious and nutritious, sweetened only with dates.
